Vinification:

The hand-harvested grapes are destemmed and pressed. The mash and must are then transferred to special fermentation tanks. The addition of selected yeasts enables careful alcoholic fermentation at a controlled temperature (25–28°C) to specifically extract the grape's best fruity components. After fermentation, the wine matures first in stainless steel tanks and then in barriques and large wooden barrels. A further aging takes place in the bottle for approximately 180 days.

Filtration:

The wine is only partially filtered to best preserve the varietal's typical organoleptic characteristics. A slight sediment indicates the product's naturalness.

Sensory properties:

Intense red with opulent aromas of ripe wild berries and fine spicy notes of tobacco, coffee and juniper. On the palate, the wine is velvety, complex and elegant thanks to its soft tannins.

Gastronomic recommendations:

Excellent with roast veal, lamb dishes, mushroom dishes and mature cheese.

Serving temperature: 16–18 °C
